Need advice for 3 week tour

I ride with a club that does multi week tours, usually two to three weeks. We use a van to carry our gear and we do motel stay. A couple in our group usually scouts the routes and makes the route sheets and arranges for our lodging.
We will be a group of 12 to 20 riders aged 50 and up [one rider is 80]. We are looking for 60 miles or shorter days, probably around 600 miles total, with not a lot of climbing.
We will be riding in early October 2009 and would like to stay out of the cold weather.
We have done the Erie Canal path, the Outer Banks, the Natchez Trace, and others.
Does anyone have any suggestions for us?
