I tour with flat pedals and strapless toe clips. I wear hiking shoes instead of dedicated cycling shoes. This is my preference. When I'm on my road bike I use clipless pedals and cycling shoes but for touring I don't. I enjoy getting off the bike to take pictures and walk around. I also don't like hauling an extra pair of shoes. I already have a tendency to take too much stuff so just using one pair of shoes for everything keeps it simple. Mind you this is just my opinion, others will want clips and straps or clipless pedals and shoes. Platform pedals and hiking shoes are cheap so you could try that first if you don't already have clipless pedals and shoes.
