If the grill is hot enough, the thick batter begins cooking quickly, so when you flip it over, the top cooked side will shift the pancake center over a few centimeters, so that when it's fully cooked on both sides, you'll often end up with something that looks like what you see in the picture - the dual pancake optical effect.
Another thing to consider is that bunnies don't like picture posing for very long, so it would be difficult to get two pancakes on top of it's head before it would hop away.
You seem to really know your pancake bunny photography. I'm impressed.
