Wrapping Brake Cables

I'm a bike newbie. Just purchased a single speed free wheel Peugeot U08...mid 70's. I love the look of the bike (very good condition) and it rides great. One thing I was curious about. I have seen some of these vintage single speeds with the brake cables coming out and up over the handlebars (what I have)...whereas other people seem to have somehow wrapped the brake cables to come down onto the frame (I think this looks much cleaner). Is there a reason or benefit to doing it one way over another? How would you go about doing it if you wanted to make the brake cables look cleaner, an easy fix?
