Those are my favorites but I am sure there is plenty of great riding anywhere you have a bike..
Bucks County, PA and north/western NJ from Princeton up to NY are really nice. Lots of small, scenic roads, paving is OK to really good, very little traffic, virtually no dogs, and motorists are generally quite nice. High cost of living, especially property taxes tho. Look at njbikemap.com to see road network.

Also, how many states have their own bike map?
