Did you clean everything with clean solvent? I put the dirty parts in dish of mineral spirits and brush them to remove all the old grease but always finish up with a final rinse or spray, not a dunk, of the parts with fresh solvent. Aerosal cans of brake cleaner work great for the final spray. WD-40 will leave oil on the parts and does not evaporate quickly.
Freshly cleaned and lubed bearings never feel or sound perfectly smooth until used a little. Ride the bike for only a few miles and everything should feel and sound smooth. I find that the bearings adjustment may also change in just the first 5-10 miles, so I like to ride a short distance and recheck the play rather than ride a 50 miler and then find that the bearings were a little too loose for most of the ride.
