If you truly had been paying attention you'd have seen the cop and stopped. Since you didn't, you either aren't as aware as you make yourself out to be or you just didn't think he'd do his job. Either way, joke's on you.
Stop signs are there to regulate traffic flow. Like it or not, you're part of traffic and - as you've discovered - are responsible to operate your vehicle within the law.
I sometimes speed in my car. Difference is I'm not going to whine about the cop when I get cited for speeding. I might try a mitigation hearing, but I'm not going to blame the cop for doing his job.
I know I'm not going to change your mind about how you ride. And guess what? I'm not trying to. Ride how you want - but freaking take some personal responsibility and live with the consequences of your actions, willya?

I encounter a couple in rural areas where you're coming down a hill to the stop sign and going up on the other side. And you can see for half a mile in both directions. The desire to preserve momentum readily overcomes the conditioning to stop.

Maybe for your own safety you should go back to riding on the sidewalk (your originally-preferred method of getting around as indicated in your earliest post).

I just called. I pled not guilty I was told I have nothing by to lose. It was 125$ but i dont want more of these. I dont plan on stopping in future doesnt feel wrong to me as long as I yeild to the right of way. I also want to go to make sure this is recognized I was on a bicycle and no points go on my driving record. I'm not going say much regarding to violation besides I am a courteous rider and always yield everyone's right of way.
I have run red lights and almost got hit by a car I simply did not see.

Wow well that's risk you take when running red lights that why you have to make sure no one is coming first genius... and I've come to conclude this site is full of ASSumers and **** starters who are trying to make themselves feel better or maybe just bored.
