I have a question about seat reach

what is a quick way to determine if my seat is too far back on the rails? Some days it feels perfect but other days it feels like I am stretched out too far.

If your sit bones are either side of the saddle nose, you have it too far back. The 'knee over pedal spindle' (pedal at 3 o clock position) is an unscientific measure of correct saddle position. Handle bars obscure front hub is another unscientific measure for correct reach, but my bars are about 1 cm too close to me by this criterion.

Yup. Drop a weighted string from the notch just below your kneecap with the pedal forward as described above. THen you can see if the string runs forward, behind, or _through_ the pedal spindle (usually the preferred point). That's a good start to adjusting your position and a method that goes WAY back in time.
