8 speed fd-2300, 105 10s shifters. Will it work?

Don't see why not.
I use a 1980s "5 speed" front derailleur on 2 of my "10 speed" bikes.

It's my understanding that front derailleurs don't really have "speeds," though I suppose there may be some differences in their respective widths. Where the "speeds" really come into play is with the shifter, if indexed, and occasionally the rear derailleur.

On a similar note, can I use a 10 speed gen. rear derailleur without issue with 9 speed shifters and a 9 speed cassette? My understanding is that this would work.

Well I know for sure it's not quite that cut and dry. Some FDs can index while others can't. I wish I could try this combo before buying the levers..

FDs are cheap. Get the levers you want, then worry about the FD.

Road rear derailleurs are interchangeable from at least 7-speed up through 10-speed (with the exception of pre 9-speed Dura Ace). MTB rear derailleurs are similarly usable from 7-speed up through 9-speed but current 10-speed MTB rear derailleurs use a different geometry and aren't usable with earlier road or MTB shifters.

I did this with a 2300 triple. It worked ok. The cage was so wide that it could throw the chain off the large ring when upshifting, and pulling in the limit screw didn't shift enough. Same problem on the inner ring, in order to make it shift it would drop the chain. It made me have to think about shifting more than I wanted to, and led to one instance of chain suck that damaged my wheel and ripped off the rear derailleur. However, I have another 8 speed fd that works great, and it's a double. I think as long as you're using a double up front you're fine.

Going the other direction, I've had issues trying to use 9S and 10S front derailers with 8S chain. The cages are too narrow and result in constant rubbing or extremely excessive trimming. Specifically, Dura Ace and Ultegra 6600/7700/7800 FDs.

Hunting for decent 7 or 8S front derailers is tricky.

I find a lot through bike shops and co-ops I have good relationships with, a lot of it NOS as well. I picked up a free shimano NOS fd today, it would have been $15 except the spring needed put back on its stops.
