I was inspecting my brakes and took the stationary threaded cylinder out. Putting the caliper back together I accidentally over tightened the cylinder and now its stuck...tight. I put the caliper on the frame to try and give me some leverage but that stripped the hex opening. Can in buy parts for it, or am I better off just let replacing it all together? Its a promax caliper on my canondale trail 5

My guess is you used the wrong size allen key. All the calipers I have come across are 5mm. If you were using 5mm and it stripped, use the next size US key and hammer it into the hex. You should be able to loosen it then.

You could also consider going into a Avid Juicy Hydraulic caliper and lever..

I replaced the entire caliper, forget which brand, from the local bike shop. I noticed that the rotors (front and back) are a tad warped. Is there a good way to true them up?

This isn't going to sound very scientific because it isn't, but you basically just bend them until they're straight. Someone makes a special tool for this but you can use an adjustable wrench or just use your hand as long as you wipe the rotors clean with alcohol once you're done.
