some cassettes have a very very thin spacer between one or two of the smallest cogs, in addition to the regular spacer. there are other spacers that come with some cassettes that are to be installed before the cassette is installed and then there is the 11 vs 12t cog lockring issue.

i would check for lost parts...

Thanks for the suggestion. I have all the parts, including that super thin spacer that goes between the lockring and the 11T cog --> https://media.canyon.com/download/manuals/CS-5800.pdf

I don't think I lost any parts, as soon as the took off the lockring I dumped my cassette into a bowl filled with degreaser, so all the parts should have fallen in together. I followed the shimano guide for where to put the spacers, so maybe its just my technique? I'm in the process of removing and reinstalling the cassette again, hopefully I'll get it right the second time around.

Perhaps the cassette is not clamped sufficiently. Does your wheelset need an additional spacer behind the cassette? Make sure that your lockring is bearing on the cassette and not bottoming on the freehub. The cassette needs to overhang the freehub sufficiently that it and not the hub is where the lockring bottoms out.
