Wheel Wobble/Hobble

I bought a used Williams 50 wheelset (carbon clincher, aluminum brake track). Everything seems solid and I was told the bearings were recently re-greased. If I crank it up in the stand the whole bike shakes (up and down) like crazy. I took the tire off, put the wheel back on and tried again yielding the same result.

Reading other posts would suggest that I need to have this checked for out of round however, the shaking is only occurring while I'm freewheeling. If I pedal, even the slightest bit it goes away entirely. Simple solution is keep pedaling but I want to be sure I'm safe. Is it possible that the new bearing grease is not even spread out?

Bike wheels are rarely entirely balanced, and cranking a rear wheel to speed in a stand will very often result in the bike shaking/bouncing in the stand.
Some people do balance their wheels, but it's extremely rare for an imbalance noticed in the stand to be a problem while riding. The added mass of the rider entirely swamps any influence from the wheel.
Out-of-round would make the bike bounce while riding, but would not necessarily make it bounce in the stand, which usually is an imbalance feature.
