OP, you have had several people bag on you for holding yourself in high esteem. I see that as an attribute. You impress me as smart, thoughtful, dedicated, responsible and reliable. The shop owner can find a warm body to replace you, but based on my experience as a retail manager, the manager will be lucky to get an equal value out of anyone else. Payroll is typically the largest single controllable expense a business has and most often where they try to pinch pennies. It's a tough place for the shop owner and for you. Here's the big question. Are you willing to leave if you don't get what you want? If you aren't, the owner is holding all the cards. If you are, I am going to guess that the owner will end up regretting losing you. Are you willing to go from $12 an hour back down to $10 in another work environment? What other work would you find as enjoyable and satisfying. I get the vibe that you need to be challenged and that you enjoy the challenges and responsibilities you have right now. Will you be similarly challenged and satisfied with your options? It seems as though your boss is otherwise good to you right now. Do you know how hard it is to find people who are mostly happy with their bosses?

No real advice. Just some points to ponder. Oh, thank you for your service. Squirtdad, Semper Paratus to you brother!
