Wheel Sets
I have a 2016 Kona Esatto DDL I am looking to buy an extra wheel set so I can run different tires to ride in gravel. My question is do I have to use the same brand? if not the same brand where would you find a cross reference some where. I understand I need an 11 speed, disc brakes and thru axels. I am new to buying parts for bikes, and how they all interchange is quite confusing at times for a new guy. I currently have Novatec Road 30 Disc wheel set which come stock.

No you don’t need the same brand. You just need the same axle “standard”, same rotor diameter, and rim size. It looks like you need a 700c rim. You have a huge selection.
If you can, you might want to get them at the local shop so you can verify the disk comes out centered in the calipers for a quick swap.

You need to use a rear freehub compatible with the cassette you now use.. to still index shift.

Be sure to consider the tire width you are wanting to go to when you purchase the new wheel. If the tire is significantly wider you'll probably want a wider rim than your current. Not completely necessary, but there are pro's for it.
I don't know if riding gravel means you might want stronger wheels with a higher spoke count. Might ask someone about that.
If you have any doubts or uncertainties, then just ask one of your nearby bike shops order some for you. Though I can always find what I want cheaper online, the difference I'm saving is not really that much. And you can still gain experience if you stay involved and ask questions of what they are proposing to get.
I've bought wheel sets from my LBS before and so has my son, I was surprised how little mark up they took on the wheels. So if your bike shops are similar, it might not be worth the uncertainty of you making your own purchase with online retailers that really can't help you first hand while looking at your bike. You can question the LBS to gain knowledge about what they had to consider so at a later date you'll have better understanding what to look for.
