105/Ultegra
Hi,
what's the difference between 105 and ultegra parts? Are they interchangeable? Can I use 105 chain with ultegra group?

Ultegra is ever so slightly lighter. The 6800 brakes are a tiny bit better than the 5800 in terms of feel/modulation. Enough to justify the price difference? Dunno.
You can mix-an-match to your heart's desire. My wife's bike is 6700 Ultegra STis, 6700 FD, 5700 RD, 5800 brakes, and a SRAM 1070 cassette.
In my experience, an Ultegra chain is about the same price as a 105 chain. Just buy the Ultegra. It's ever so slightly lighter. Now if you're asking if you can use your current 105 chain with new Ultegra stuff... when you put on a new cassette, put on a new chain. Unless you're replacing an unused cassette.

Shimano chains are differentiated mostly by what parts have their sil-tec surface treatment on them. The HG601 105 level chain has the roller link plates coated, HG701 Ultegra chain has both plates coated, HG900 coats all parts of the chain. This should result smoother chain movement, longer life, and increased corrosion resistance, but the degree to which is difficult to say.

Look up "Shimano compatibility matrix". You should find a PDF which tells you what you can mix and match.
I'm pretty certain using older brake levers with newer (SLR-EV) calipers is not recommended.
