I have a 1 inch threaded fork on my bike can I change this to a threadless carbon fork

Yes. You will need a new headset and stem along with the fork.

Kestrel makes a 1" carbon fork (the EMS Pro) with a steel steerer that is both strong and stable if not particularly light. Reynolds and Easton make a 1" all carbon fork and Performance offers a house brand 1" carbon fork with an Al steerer.

The only problem with 1" all-carbon forks is that you are limited to about 25 mm of spacers under the stem and that limits how high you can get your bars.

Nashbar sells a 1" carbon fork with aluminum steerer for only $60, plus they have a 1" threadless headset for $13 :)
