HeadSet Stack Height
 

I've been shopping headsets and was wondering what the different stack heights are for? Is it the space needed between the top race and the bottom of your stem?

Yep, that's basically right! Take the difference in stack height between your current headset and the new one, and that will be the amount of exposed steer tube taken up/freed up by the new headset.
