Hello. This is my first time posting and I tried to use the search function to find if someone else had already discussed this topic, so I am apologizing ahead of time.

Here's my problem...

I have an early 90's lugged steel Bianchi, first 'real' bicycle I've had since I was 14 and I'm having a lot of fun between riding it and maintaining it. I had been getting some creaking from the headset during climbs and whenever I would put any force into the bars and whenever I would take my hands off the bars, everything just starts going to the left.

I took apart the headset, cleaned everything, re-packed the grease, and re-assembled it properly. Great news is, the creaking is gone completely. The bad news is, the front end still really loves going left.

Any help or criticism will be appreciated, I'm just trying to learn what's going on and if it can be fixed.

Most likely your fork is bent off to one side. Other possibilities are a bent frame, or an improperly dished wheel, but my money is on the fork.

It can probably be straightened, if you can find a shop with a real mechanic who knows how to do such things. That's not a do-it-yourself job.
