Customizing a Shimano Brake

I'm trying to figure out if it's possible to replace the center pivot bolt on a Shimano caliper with a longer bolt. Looks possible from examining a brake and the exploded diagram on the Shimano site, but I don't want to completely disassemble the ones I've got on my bike. The goal is to order a new caliper, order a longer bolt and a matching butterfly nut from a place like McMaster-Carr to use as part of a rear brake bridge Keirin brake setup.
