How do I stop '03 XT Disc brake rub?
 
My first set of hydraulic disc brakes and I've noticed a slight rub. Not that big a problem but I've been unable to find any how-to online that will teach me to adjust these brakes.

Anyone seen a useful guide or can provide help here?

By looking at the brakes and manuals I've found four things that can be adjusted:
1. cable length - there are screw adjustments at both ends of the cable, I'm guessing this would be the same as adjusting the length of a brake cable but I've found a number of vague references that suggest that lengthening the cable will not back the pads off the rotor
2. caliper position - loosen bolts, apply brakes, tighten bolts
3. shims in the brake pads - haven't figured out how or if this is applicable for these brakes
4. bleeding hydraulic lines - brakes do not feel squishy so I doubt this is the problem.

What I was hoping to find is a spring adjustment to back the pads off of the rotor. thanks for reading

With hydros, the best way is to loosen the bolts squeez the lever and zip tie it down so the pads stay closed aginst the rotor.
Then check to see if you need any shims between the caliper and the mounts on the fork or chain stays.
If it is not flush aginst the mounts go to your lbs and get some shims. They come in .2mm and .5mm. get a few of each. Then add then one at a time until you get a tight fit and then torque the bolts down. release the lever and you should be good to go.

With new discs there will always be some drag until the pads start to wear down.
