40 hole rim, work with 36 hole hub?

So I'd like to use a 40 hole rim that I have... I'd like to put a single speed coaster brake on it but cant for the life of me find a 40 hole coaster hub. None on ebay either. I read on the forums that shimano makes one, but the bike shop couldn't find it in their books. Is it possible to use a 36 hole hub with the 40 hole rim?

Get yourself an old Sturmey Archer hub. Many are 40H, in fact, I had to work hard to find a 40H mtn rim to lace to the hub on my rain bike.

Possible - yes. Advisable - no.
Leaving a few holes empty at the hub is no big deal(if you can deal with the spoke length differences) but leaving a few empty by the rim is another matter entirely.
It'd get particularly awkward if the spoke holes at the rim are drilled with offset, that'd give you a nasty bend down by the nipple trying to force a spoke aimed at the left flange to line up properly with the right flange.

But it might not be too bad if done on a center drilled rim with a reasonably high profile.
