I found a steal on a roadbike for my GF. however it has bar end shifters and normal brakes but comes with sora levers. how hard would it be to take of the bar end shifters and brakes and replace them with the sora shifters that are intended for the bike(full sora drive train)

Do you mean that it originally came with Sora levers but someone removed them for bar end shifters? If so, the swap will be straightforward assuming you have some experience tuning deraillers. There's nothing really fancy about installing shifters. They come with all the parts you'll need for the swap plus very detailed instructions. Park Tool's website also has great info on adjusting everything.
