Which Cartridge Brake Pad?
I have a Specialized cyclocross bike (the Tricross) which has "Forged linear pull brakes w/ cartridge pads". These are really cool, as they are so easy to adjust and keep aligned to the wheel (the multiple concave/convex adjustable washer setup on the more basic brake shoes always get the best of me). However, i'm new to cartridges and see references to Avid style and various Shimano styles. How many different cartridge designs are there, and how can i know which mine are? The pads are getting a bit worn, and i'd like to put in some Kool Stops pads, if possible, anyway.

As far as I can tell from your post and the type of bike, you have v-brakes. You want these.

V-brakes are just a type of brake. Many companies make them. I'm also pretty sure there is only one style of off-road brake cartridge. The one's I linked you are the ones you'd want to get.

Shimano's lawyers would tell you that only Shimano makes V-Brakes and that the others are linear pull brakes.
