Adjusting Disc Brakes
 
I’ve recently re-greased the headset and replaced the front wheel after the service, though my disc brakes (cable Tektro IO) seem to grind and become squeaky. I’m pretty new with disc brakes so is there any easy ways of adjusting them without needing to drop it off a LBS?

How sure are you that the wheel is properly seated in both dropouts? That's an all-too-common issue. Stand the bike upright on it's own two wheels. While pushing downward on the handlebar loosen and retighten the quick release lever. If your brake was working OK before that'll probably fix it.
