Cantilever brake pads vs. V-brake pads

Is there any difference between brake pads for traditional cantilever set-ups and brake pads for v-brakes, assuming they have the same kind of post?

In other words, can I use threaded-post shoes on my Tektro Oryx cantis even if the shoes are listed as for v-brakes?

Yes. As long as the pads have the same post, you can use them interchangeably.
