Single Chain Ring to Double?

Probably a stupid question: I have a Shimano 105 FC-1050 crankset w/44T ring on it. Can I pick up a second ring and some longer bolts to make it a double?

Sure, except you may also need a longer spindle for your bottom bracket if the inner chainring hits the chainstay.

Good thing I don't have a bottom bracket yet. :)

Got the crankset off ebay for a 1x9 project and then rethought and figured it would be nice to build this bike up with a wider gear range.

Sure, go for it. It was a double originally anyway. If you wanted to get freaky, you could get extra-long triple bolts and install two rings and a guard, or a single ring with dual guards, or three identical rings...
