Hahah nice... i actually thought thats what was going on. I assume the same applies for the front? 2 Clicks 3sp?

2 clicks = 3spd (unless there is a trim function which isn't the case for Sora).

7 speed bike usually means 126mm rear spacing. 8 speed requires 130mm spacing. So unless you have a seven speed cassette on a 8 speed wheel (with a spacer behind it), you are not going 8 speed.

The 8-speed shifter won't work well with a 7-speed cassette (or freewheel) because the cog spacing is different. The derailleurs should be compatible except that you need triple derailleurs for a triple crankset, if you do that.
