Looking for 36 hole hubs
Any suggestions for 36 hole shimano 10sp compatible rear hub, and 36 hole front hub?

Of course any hub 8-speed or newer will also accept 10-speed cassettes so you aren't limited to current hubs.
Check with several bike shops as they may have some older 36H hubs stashed away that they would be happy to sell at an attraftive price since the demand for these is quite low.

I just bought a new Shimano XTR M975 36 hole hub, for disc brake. I left it at a bike shop, The Monkeywrench in downtown Lincoln, Nebraska just yesterday. They're lacing it to a Mavic XM-719 rim-brake rim for me. The idea is to have a stout set of wheels that can be swapped around on different bikes, allowing for either rim or disc brakes. I like using them for touring, utility and recreational riding.

You can use 7, 8, 9 or as I understand it, even 10-speed cassettes on the standard freewheel on them.
I got mine new from eBay for only $128, but had to wait and watch a while to get a new one for that price. I'm sure you can find a bargain if you are persistent.

Picked up a used LX front and rear (diifferent editions). Bearings feel smooth so I'll disseasemble them, clean and replace the bearings. Build the wheels as a project. Any advice for online tips & tricks on wheel building?

You're right, but it's not a giant leap to assume the OP was talking about road hubs since 10 speed compatibility was mentioned. 10 speed mountain isn't all that common yet, and touring frames could go either way. Though 9 speed mountain setups are probably more common in touring setups at this point as well. It's really hard to say!
