tell me about headsets - swapping frames. Salsa Casseroll to Soma ES.

I recently got a Cannondale CAAD10 and was professionally fit in the process. Turns out that my old commuter, a Salsa Casseroll Single was a pretty poor fit. The Soma ES looks like it matches the features of the Casseroll frame with geometry thats similar to the CAAD10. I'll have my fancy road bike and my around town commuter.

I'm thinking through the process of buying the frame and swapping the parts. I believe I'll need to buy and install a headset on the new frame. What should i look for in a headset? (hm, the Stanyan frame looks awfully nice, but how to justify the price.....) - CAAD10 blurb with link to geometry info

It takes run-of-the-mill 1 1/8" headsets, so how about an inexpensive cartridge-bearing model like this:

I got my Smoothie ES to fit like my road-racer. It's versatile and practical, since it has full fenders and a rear rack, but its long chainstays do make it a lackluster sprinter.
