What pedals do I have?
Can anyone tell me what pedals these are? They have no identifying markings on them whatsoever. They came on my bike when I bought it off a guy in 2006, but the LBS put on platforms shortly thereafter since I don't have bike shoes or cleats, and they've been sitting on the shelf ever since.
Do these pedals have to be used with a certain type of shoe? A certain type of cleat?

Look like Shimano SPD clones. They'd use the SPD 2-hole cleat so shoes would need to accept 2-hole cleats.

Would I have to use "MTB" shoes, or would road shoes also work?
Is there any reason to use one type of shoe over the other, aside from the fact that MTB shoes typically (I think) have the cleats more recessed so that they don't contact the ground when walking?

Those are Wellgo pedals that require a Wellgo 98A cleat or a Shimano SH-51. SPD pedals require a MTB shoe; there are flats on the pedal that support the pedal on the raised area around the cleat.

looks like a Wellgo brand knockoff of the SPD also marketed under the Ritchey name. either road or MTB shoe will work as long as they have the 2 hole SPD style mount. except for the highest end MTB shoes road shoes tend to be more rigid for better power transfer and less walkability

No, just need to have provisions for 2 bolt cleats. I've got a pair of road shoes with SPD cleats on them that I use on my commuter occasionally. My wife has SPDs on her road bike and uses road shoes with those.
Typically, road shoes will be a bit lighter and stiffer but more difficult to walk in. MTB shoes will be a bit heavier and softer but easier to walk in (and less likely to damage floors if that is a consideration for you).
