V Brakes suitable for a 2.2" tyre
Any ideas? I want them to be as flush as possible with the frame. I was thinking these look ok https://www.sjscycles.com/store/item9782.htm

I agree the tire size does not matter. It is the mounting position and rim width. I tried Shimano XT on my GT with a Sun Rhyno Lite rim. They stuck out so far that my heels hit them. I put on Avid Single Digit 7s and they are great. They are more powerful than the XTs also.
