Makeshift 11 Speed
 
If I add 11 speed shifters, 11 speed chain, and 11 speed cassette to a 10 speed Veloce Bianchi, I now have an 11 speed Veloce-ish Bianchi, right?

Yes. My only question would be if the rear derailluer for 10 speed has the same pull ratio to work with 11 speed. I'm not sure. Wouldn't surprise me if they changed the ratio of 11 speed to force the purchase of 11 speed rd.

Anyone know if 11 speed Chorus shifters play nice with a Veloce rear mech? Will I lose Ultra-Shift functionality?

Is the shifter the one that do all the tricks, a veloce rd will work. The problem is that veloce is not rated for 11 but 10 speed. Since I havent done that trick I can't tell you if it will work but from what I have read a 10 speed rd wont work with an 11 shifter due to pull ratio difference.

From what a campy mechanic told me was that an 11 speed rd will work fine with 10. What I have done and actually using is a chorus 11 shifter with a 10 speed rd and cassette using one of those pulleys thingys, work pretty well.
