I'll probably try and grab some mineral spirits this weekend and may even start the tear down. I'm itching to get started now! Thanks to everyone for all the input!

Keeping the cable housing is only helpful if they were properly sized and you aren't going to change anything like stem height/reach or lever position. I prefer to size as I install according to the need.

Im still making plans on what to do with this bike other than clean it up.
