I have tried searching this forum, Ebay and the internet with no success..
Does anyone know where I can find some name plates for Dura Ace ST-7800 shifters?

The majority of places have stopped making small replacement parts available, since there is more profit in selling new units than in selling us pieces to fix our old ones.
I don't know your location, but I think partnering with a large LBS who has a good relationship with Shimano may be your best bet.
