Any 27" clincher should work, but 1 1/4" is by far the most common size. AFAIK the only other widths of 27" tires you'll find now are 1", 1 1/8", and 1 3/8".

The first number is the ISO size, 630mm. The second number is the width of the rim, 17mm.
