Do you want them to index? 7 speed Shimano exist, but are hard to come by. Easier probably to buy some Rivendell pods and spacers and make your own with a pair of downtube shifters.

There was a thread on Paceline recently by a guy who wanted to trade his 7s Shimano bar ends for DT friction shifters. I couldn't find it quickly, but you might.

These SunRace 7-speed shifters aren't bar ends, but perhaps they might be used with Shimano bar-end pods.

I have some black SunTour 7-speed bar end shifters I might part with. They won't index shift super crisp,y with Shimano, though.

I don't have 7 speed but have some Dura Ace 8/9/Friction bar end shifters.
