WTB: Shimano 6510 Shifter Cover Plates
If anyone knows of a source, please let me know. These are the ones that say Flight Deck on them and have a chromed appearance. They need to be mint/excellent condition with no scratches.

There's a guy on EBay selling blank versions of that item (3D Printed). I bought some because I'm kind of in the same boat as you. The original ones are very hard to find. I did find some a few years ago by diligently and frequently searching the web with all the search terms I could think of. I found them in some obscure web bike shop that I can't remember. Check out EBay if you haven't already. You might be able to have a local decal shop print up some graphics to stick on them to match the original. Or, you might find some real ones (I just saw some 5500/105 of the same era listed).

I never turn my bikes upside down, but they still get scuffed through normal use. I don't know what you'd need to keep them pristine, maybe cover them with tape?

Bought the bike second-hand, so I have no way of knowing how they received their "patina"... I had some on a Madone one time and they never got one scuff over 5 years. I try to take care of my stuff.
