Nice! I have saved the photos to my file of interesting old saddles.
I don't know who made these, but I have two saddles in my "study collection" with the same frame. One is stamped "Mercier" and the other has a big Motobecane "M" on it. So whoever it was, apparently they made saddle for bike companies.
T&B did that as well; the Schwinn "Sprint" saddle seems to use the same frame as the Ideale 42.

Gauthier & Cie was a rather big firm that could provide anything bike-related (and made car bodies to boot), so it wouldn't surprise me at all if he made saddles for others as well.

Here's a couple more Henry Gauthier saddles, the number 1 and the number 73 to compliment your 79:
The 73 is very narrow and probably a track saddle.
In the background is another obscure French saddle the 'Pearl', probably from the 1940's. It has duraluminium rails and the maker's name stamped on each rivet.

I saw pictures of the 73 model and it looks painfully narrow to me. Very pretty, though.
