A tale of three Treks-groupset choices

Three vintage treks currently reside in my stable, the ones in my signature. These are three solid keepers.
The '79 has a full Campy NR group, with Rally RD and bar ends. That one will stay as it is. The 957 and new to me 720 are in need of groups installed.
I have the following groups available:
Campy NR circa 79ish
Campy SR circa 81
Campy Victory (including long cage Triomphe LX RD)
'99ish Campy Racing Triple (choice of bar end or DT shifters)
1st Gen Suntour Cyclone/DiaCompe/Sugino triple
Shimano 600 TriColor
Suntour Cyclone 7000

If it were you, what would you use, and why?

The 720 is easy. I'd build it with suntour vgt rd and bar cons. For the crank I'd run a 110/74 bcd crank like an early sugino or shimano. For the cantis, I'd hunt down the shimano br m732 cantilevers as they work great and will allow you to run 700c wheels. For wheels, something built up with superchampion 58 rims would be my first choice but the sun cr 18s are a solid choice as well if you want new. For hubs, specialized sealed or phil wood would be my first choice.

The campy stuff would be sweet on the 957.

I agree with @bikemig's recommendations, except I'd recommend Campy Racing Triple for a bike you're actually going to do serious touring on.
