Campy 90s 8-speed cassette cog interchangabilty
Hello,
I have a 94 8 speed Campy Veloce (ergo) groupset. The cassette is 12 - 21. If i bought another set of 8 speed cogs, am I able to swap them out create different gear ratios? Or is better to just to use a different set altogehter? Can you mix and match cogs of the same era between groupsets if they are all 8-speed?

If they're loose cogs, you should be able to combine cogs from different 8-speed cassettes to make your own custom cassette. Be aware that ramping on cogs may not line up correctly if you change the position of a cog (say third cog on one cassette to fourth on another).
Another option, if you can find one, is the SHIFT-8 conversion kit by Wheels Mfg. It's a set of custom spacers that lets you turn 8-of-9 cogs from a 9-speed cassette into an 8-speed cassette. (You may have to pay attention to spline pattern. I'm not sure what type you have or when Campagnolo changed it. Branford Bike has a helpful web page to help you figure that out.)
Miche 8-speed cassettes for Campagnolo are still be available, too. You can even buy them sprocket by sprocket from xxcycle.com in France. Maybe elsewhere, too.

The cogs are labeled A B C..., and you can swap between certain cog sets, but not others.

It's actually a bit more complicated: several cogs were produced in two of three variants (A, B and C) and according to Campagnolo specifications each specific variant should be used in a given position according the the attached scheme:
