I'm semi familiar with the area, I love it around there!
I'm sure that one will hurt the most! But I hear from a friend that lives in the area that Ebbets is the steepest.

I'll be bringing a fair bit of my own food/drink mix, and also eating from the aid stations. I did a 100 miles 11,000' ride last summer and averaged almost 13 MPH (while moving) and felt pretty good on that ride, I was pretty out of gas at the end, at that pace there was no way I could have put down another 29 miles and 5,000', but I am in somewhat better shape now so I think it will all come together pretty well, but I do need to make sure to go nice and easy.
Jet lag will certainly be my friend for an early start! I was planning on pedalling by 5 am, that gives me 15 hours to finish, I doubt I'll get time cut, but I'll freely admit that there is a chance I'll blow myself up and not finish, I generally have 3 speeds, nearly pinned, almost pinned and pinned :-P . Yea, I really need to manage that on this ride!

The keys to this ride are; 1) eating enough carbs to avoid bonking (I burned 7,000 calories last year); 2) drinking enough including electrolytes to avoid cramping, and; 3) time management so as not go so slow that you miss any cutoff times or pushing too hard early and burning out on the last pass. I started at 3:15 am last year and will probably do similar this year. Your jet lag should help out with an early start time. Be aware that the rest stops have limited nutrition choices so be sure to check the literature to see what they provide and then carry your own stuff to supplement.

that is an Alex Singer "Maison" (house built) rear rack. it's the large rack available as an option when you order the Sportif model from Cycles Alex Singer.
