I bought a Sarroni red Super Profil for a steal... Well it was cheap as the previous owner let it rot out in the rain. It needs quite a bit of work but I’m keen to restore it within a reasonable budget.

I’ve made some progress - I got the seat post unstuck and got my hands on a reasonably priced fork (it came with non-original fork).

The bike came with full Shimano Arabesque - lovely - but I feel Campy on an Italian would take it to the next level.

But the campy stuff I’m finding is so expensive so I kind of gave up on the idea. But then a really well priced Schauff bike came into my possession which has full Gran Sport group.

Im wondering if that’s an odd pairing as it’s lower end Campy?

Thoughts anyone?

Agreed that Shimano Arabesque 600 is pretty stuff, and that Campy may also be a better fit for that bike in the long haul. I’d ride it as-is after an overhaul then slowly build a pile of whatever parts fit your tastes. Wait for deals. I don’t know how things are looking now, but that general approach has usually worked out for me. Of course, keep an eye out (or notifications set for) misspellings of parts. Plus, sometimes a bit more expensive is still a deal if it gets the job done and condition is good. If you like the Gran Sport stuff run with it. I don’t have any first hand experience, so no recommendations either way from me. 600 might be a bit more enjoyable depending on the condition between the two. New chain (maybe 9sp), cables, housing, pads, tape, saddle to fit, etc. Change the gearing for your area if needed.

That was a top level bike so yeah Gran Sport would kind of be beneath it if you care about that. Super Record would be appropriate. A picture of one I used to have for reference:

There are very few Colnago bikes around from before the late 60's.

You are thinking of the early Gran Sport, which was top of the line until the Record came out. I think the OP is talking about the mid-70s to early-80s Gran Sport group.

In the '60s the 'mid 70s to early '80's didn't exist.

I'd go Gran Sport over 600 'arabesque' in a heartbeat. Functionally it wasn't that different from NR. If it's one of those 3 arm spider GS cranks, be forewarned that chainrings are almost unobtanium.

Vintage Campy NR/SR is generally a pretty good deal now, if you do an inflation check and realize just how expensive it was when new.

??? Not sure what you mean. Of course it did. GS became the second tier 'junior' level campy in the 70s and early 80s. I vividly remember it in fact on the starting line at jr's races.

why not

1. re-do the 'Nago with GS* from Schauff, to make it ride-able first. assuming from your 'low end' mention, it might be '70s Nuovo Gran Sport. far from the best, but could be a bit more appropriate than Arabesque.
2. if the Arabesque from the 'Nago is a full group in decent condition, it can fetch some money too. and possibly the Schauff frameset, too. not enough for a full set of mint NR or SR, but good starting point to hunt stuffs one at a time? they will pop up occasionally with good prices here and there, if you know what you are looking for.

just a thought based on that "we" keen to seeing Campy then Schmano on a 'Nago here. nothing wrong with Arabesque, i mean.

Uh yes it did. There was a full GS group from at least 74 (Catalog 17) to early 80s. Ugly RD, two FD (parallelogram and matchbox), crank, hubs, seat post, pedals, shift levers and brakes. Headset and BB too I think. Most common was to use an NR RD with the group as the GS RD was really ugly and cheap looking. If the OP is going to go Gran Sport I would suggest doing that. An NR RD is much better than the GS. I would probably also use a Record crank because as mentioned the GS chainrings are pretty much not available.
