A Minoura center-mount handlebar bottle cage mount is a fantastic way to carry a bottle of water for ease of access. I use either a 750ml (24oz) or a 500ml (16oz) bottle on mine. Sometimes I'll use a 710ml Powerade bottle with the cap and valve removed and a plastic tube stuck through the opening. that allows me to drink on the move without having to take a hand off the handlebar.

I too find it interesting that going for a short two or three days tour takes almost the same gear as it does for a two-weeks long tour if I'm totally self supported. The only difference is the amount of food I pack.
Short tours are a fantastic way to get to know ones locale if there are places to camp.

Those fold up chairs are an underrated luxury on a bike tour. Did my first S24O earlier this year, father and son that I rode with were like this:
