I did stick to 27 on purpose. I had read about issues with 700 having newer hubs mostly. So I figured in that dept. just stick to the OG specs and hopefully it'll be the last wheel set I but anyway.

As far as the derailleur, that's where I'm having most of my issues. I just don't know what to look for. I'd honestly be in to keeping mine, but the little info I've found has led me to believe it will not work with brifters. I'm assuming that is correct because I have not heard differently. Are there any recommendations for a 6 speed derailleur I should be looking for? My issue is even if I were to look on here or for used, I'm not sure how to know if they work with my setup/ ideal build.
A 700c wheel set with a freewheel hub shouldn't be hard to find.

You mean 7 speed right? 7 speed is easy, literally any Shimano 7, 8, or 9 speed derailleur will work with it. Tourney is the lowest level garbage that Shimano makes, if you absolutely have to buy new, see if you can find an Altus, they're cheap and they perform relatively well. They were plentiful and easy to find before the parts shortage, not sure about now.

I was going to order a 6 speed, due to knowing it would fit. I didn't know if getting a 7 speed would make it not fit the frame. Maybe it would be best just to order a 7 freewheel and see? Ah, I had seen the Altus, but the places I saw it labeled it as a mountain bike derailleur so I was unsure. Once again, thanks so much for you input!

The 7 will fit. You probably will have to spread the rear a little to fit the wheel either way.

The 7 speed brifters won't work with a 6 speed freewheel so you don't have much of a choice, really.
