Gah I'm jealous. I generally don't like patina either but this one will clean up nice enough and, as they say, it's only original once.

cleaned up the chrome a bit, switched bars, stem and brake levers. now it's got that I won't say sweaty, as found look

You might flip the front wheel, that skewer lever just looks vulnerable.
the rear mech needs to come apart, hopefully the grease has just petrified limiting spring tension. There are adjustment points for the spring to increase tension. The springs do weaken over the decades.
be sure to repack the jockey wheels also- those appear to be the ball bearing type.
