Question. Keep or update?

This is my bike, in the video is how became after the restoration.
Bike has proven to be from 1956 since is marked on the bb spindle.

But is you took a closer look the levers are not matching, probably the brakes calipers too.
They seems an old version from universal but the brand is "san giorgio". Maybe they are related with the bike year but since they are not matching there are not a reason to keep them.
So, there are two options:

1- Keep everything like this.
2- Install some spare parts i have aside (i have a very nice suicide-type from derailleur can match the drivetrain and also a matching simplex crankset). But for the levers i have some early type of Universal and balilla...

Here some photos:

Entire bike https://drive.google.com/file/d/18TS...ew?usp=sharing https://drive.google.com/file/d/18M4...ew?usp=sharing
San Giogrgio calipers https://drive.google.com/file/d/18dx...ew?usp=sharing
Lever 1 https://drive.google.com/file/d/18od...ew?usp=sharing
Lever 2 https://drive.google.com/file/d/18mt...ew?usp=sharing
Other simplex parts i had aside https://drive.google.com/file/d/18x2...ew?usp=sharing
Balilla and universal parts (i have to take a photo... maybe i'll post it tomorrow)

Here the full video when the bike has been restored
(if you are interested into the initial condition here the full playlist
)

So... Returning to the question..
Do you think is better to keep with those parts or update with the parts i have aside?

It might be only me but with such time capsules i would either keep as-is as its part of the bikes unknown story or find matching replacements in the same state e.g for the levers but would definitely refrain from putting anything better condition shiny stuff on it not to create a Monchichi Jesus.

Awesome bike by the way!
