1989 Klein Quantum with 8-speed Dura Ace components, except for the 2014 Campy Ergo 11-speed shifters. The Campy levers will shift Shimano 9-speed cassettes and road derailleurs with no modifications, and Shimano 9-speed shifters (bar-end and down-tube) will shift Dura Ace 8-speed. So 2014 11-speed Campy Ergo shifts 8-speed Dura Ace! This bike has old school Uniglide cogs but it probably shifts as well as - or better! - than some 11-speed bikes.

Using 11 speed shifters with 8 speed cog, do you end up with 3 extra clicks you just don't use? Always wondered how that worked.

Yes, three unused clicks. Two extra clicks with 9-speed. But you don't really notice with Ergo because the lever returns to the neutral position after shifting. And the derailleur limit screws stop overshifting and extra clicking. It works amazingly well. I have 11-speed Ergo shifters on a Moulton with a 9-speed Capreo cassette. Works great.

It's fantastic. I have a Schwinn Super Sport that is the strange Schwinn pink/mauve. It needs a repaint, so I'm going to go with a nice bright pink like yours. Great color.

Here is my newly built up Guerciotti with complete Shimano 105 5800. Velocity A23 rims, new Campagnolo headset and 1990s vintage seatpost, 3ttt stem and bars, Selle Italia Turbomatic saddle.
That funny new Shimano crank has actually grown on me. And the 50-34 rings paired with the 11-32 cassette gives me the serious hill climbing gearing that I like to have. Photo is at the top of one of the hills in DC's Rock Creek Park. This is all at once my first Italian made frame, my first bike with brifters, and my first true go-fast bike and I'm really liking it so far.

@rowebr Looks great. I have to add an Italian to my stable one day too. I also used the compact crank with the large cassette and it makes the hills very managable and almost enjoyable.
@ratfink76 That Bertoni would make me break my neck if I saw it flying past me in the opposite direction.
Here is my '89 Fuji Ace which I changed slightly recently. I flipped the stem because the upward angle was not comfortable.

I was just thinking that Shimano must be trying to kill C&V bike sales by refusing to make a crank that doesn't suit them. But it's definitely not bad and everything else about this bike is just plain gorgeous.

Thanks! The crank definitely was the sticking point for me on the 5800 group. I decided the price for the group was so good that if I didn't like the crank, I would just change it out later. It does have more of a shine to it in person, in the stock photos you see with the online sellers it has a dull grey look. A previous poster in this thread reports that the shiny Velo-Orange crankset works just fine with Campy Athena 11-speed, if I try that myself I'll post the result here as well.

I finally can contribute to this thread! My 1988 Schwinn Tempo. It was inexpensive and a little beat up, but I brought it back to daily rider status and then some. It is my very first bike build, and besides upgrading old with new I also used quite a mix of parts, a Shimergo setup with new Campy Veloce ergos & brakes and most everything else lightly used DA7800. Also to make this build more unique if it wasn't already I am experimenting with 1x10 drivetrain, never put on a FD and using only a Wolf Tooth dropstop chainring (44t). An XT 11-36 out back gives me enough range, actually more than the original 2x6, and a Wolf Tooth roadlink adapter lets the 7800 RD shift the 36 cog no problem.
The sunset pic was on the very day I finished the build... had it done for literally minutes. But had to take advantage of the beautiful sunset and fresh build. But it wasn't 100% finished yet in that pic either.
I'm still tweaking things... first time ever doing bar wrap and it's not perfect. The Shimergo work well but still tuning everything. Might want to shorten the chain some too. Want to add a chrome chainstay protector if I can find one.

V.O. Grand Cru Sabot Pedals (one of the few nice looking polished pedals that are both barefoot friendly and still look decent on a vintage-ish bike)

Very interesting. Makes me want to try something like this. Are there any MTB derailleurs that will work with 10 or 11-speed STIs or Ergos? I recall meeting someone who had a SRAM rear derailleur on a 11-32 or 36 cassette on a road bike a few years ago but I can't remember how he was shifting it.
I've got a bike that uses Gevenalle GX shifters with a 10-speed Deore Shadow Plus rear derailleur and an 11-36 SRAM 10-speed cassette. It's a nice setup (though not C&V and not as pretty as @T Stew's Tempo).
Edit: Apparently 11-speed SRAM road stuff isn't compatible with their MTB rear derailleurs, but their 1x11 road/CX stuff will handle a wide range cassette.

Some are, it just depends. You need to mate "exact actuation" shifters with "exact actuation" RDs. Some SRAM MTB RDs use "exact actuation" while others use "1:1" or "X-Actuation".
