Questions about all alloy handlebars.

I admit it, my knowledge of handlebars is limited. I have three that are all alloy and currently not mounted to a bike. I know little as to why one may be better than another assuming one of them is better than the others. So I'm posting here to learn what I can from those who are more knowledgable.
The three different makes I have are: Sakae, Road Champion, Nitto Universiade and Windsor Record De La Hora. The drops of the Sakae are flaired out from the top, other than that there is little detectable difference in the shape of the three. They are all about 39-40cm wide. The centers, where the stem mounts, have different diameters, the Sakae is 2.50cm , the Nitto is 2.53cm and the Windsor is 2.61cm. So I know I have to find a compatible stem for each. While I don't have a balance sensitive enough to weigh each of them, the Windsor is the heaviest from just picking them up, I can't tell between the two remaining bars.
My questions are, what else is important? Is one brand considered superior? Is there something I've missed?

my personal vote would be for the Nitto, but that is just me. The sakae is a randonneur bar, the little extra bend moves the lower part of the bars (the drops) up a little higher and out a little. Touring riders are especially fond of these bars. The Nitto is a straight Maes bend (famous dead racer guy). Nice deep drops for less frontal area when yer crankin'. The windsor is probably a rebadged Gerry Burgess (GB), also a Maes bend, and probably fine for most applications as well. English, of course.
