Derailler choices?
I admit I've been a Campagnolo snob. When I started riding in the early seventies Nuovo Record was what I lusted after, so that's pretty much what I have built with since, except for the 50s bikes with Gran Sport. But I have lots of Campagnolo bikes.
Looking to branch out with other options. Sure, there's Suntour and such; I used them in the 70s and they work great but don't have any soul (to me). So, I'm thinking European. I love the Huret Jubilee, I had sets in the past I sold, but those are really pricey now. Had some all alloy Simplex too, which seemed nice, but sold before I ever used.
Any other options? Zeus is just a Gran Sport/Nuovo Record clone. I know there were other Hurets, but I'm not familiar with them. To fit Campagnolo dropouts unfortunately...

You will probably scoff at this, but my recommendation is the mid '80s Suntour Superbe Pro. They look nice, and appear very well made and solid. I recently put one of these on my Marinoni, and boy what a difference it makes. It is mated to Simplex RF shifters, which helps undoubtedly.
If you want to keep your snob appeal, then stick with Campy, or for an in-between go with Caterham's SLJ suggestion - looks vintage-y, but likely shifts a lot better than any old Campy offering. I think the later model rear SLJs had a slant parallelogram too.

Perhaps another suggestion to scoff at, but sounds like it's time to consider non-derailleur options: single speed, fixed, gear, internal-gears. It's just my preference, but many more of my bikes have those set ups than have derailleur gears.

I was in the same place, all my bikes were campagnolo, not snobbery, it's just what I
had on hand, or the bike came with it.
I build my Zieleman using a mix of Suntour Cyclone and Superbe components.
I just received all the parts I need (except hubs and seatpost) to make this a full Superbe bike.
And on that note I'm using Super LJ (retrofriction) shifters.
Don't tell CV-6 but I think I need to build a french bike, just because.

I think these are worthy of consideration:

I've seen used SLJ's sell for more.
I'll bet they'd polish up nice.
