I slapped a set of Soma Sparrow bars and a shorter stem, and put a cheapie set of pedals on an old Vitus 979, ...instant townie. Light as a feather and fun as can be.
I was skeptical about using MTB levers, but with dual pivot brakes it works fine. I have a few nice road bikes, but lately this is the one that's been getting the most use.

It has a mixed bag o' stuff. Campy SR crank, MKS Sylvan touring pedals, Campy something or the other RD, SR front derailleur, Huret downtube shifters, Campy aluminum headset of undetermined type, cheapo Campy Veloce brakes, Campy Gamma Strada rims laced onto Shimano hubs of some sort, I think they're 36 spokes but I haven't bothered to count them, Campy aero seatpost of some sort(maybe Chorus?), Shimano MTB levers that say "Servo Wave Action", whatever that means, and cabling was whatever I had sitting around.
One of these days I think I'm going to build another one with a proper group, but for now this works. I think a single speed would be a blast.
